I made this in the crockpot today. Cut the sweet potatoes to fairly small pieces. Used canned beans and doubled the recipe. It took 6 hours on high in my crockpot.

I am plant based/vegan and also have Alph-Gal syndrome. I have been off dairy (highly intolerant) for nearly 20 years. I think I’m eating right but always yearning to learn more. I am 59 and am an ultra runner. Staying fueled is a struggle but not impossible.
